Carnival of the Recipes Is Up

The latest Carnival of the Recipes is up at Random Thoughts From Marybeth.  I particularly liked the sound of the chicken dishes linked this week, and was reminded how much I love apricot preserves, so I bought some along with the other groceries on the way home.

Once again, I neglected to post a recipe to enter this week.  Sheesh.  I have a good one too.  Maybe next week…

Carnival of the Recipes Is Up

The 10th Carnival of the Recipes is up at Inside Allan’s Mind.  Yum!  My tuna noodle casserole is in it. 

I expect to post a recipe for chicken (more for the sauce that goes on the chicken, really) soon to enter this week.  Since its source is my stepsister, and the dish has no name, I’ll probably call it Laurie’s Chicken.  Otherwise I would have to come up with something clever like Fire Chicken or whatever.  Stay tuned for that soon.

Carnival of the Recipes Is Up

The 9th Carnival of the Recipes is up. 

Sadly, I didn’t get anything in for it this week.  I have a somewhat ambiguous recipe I want to try, and in the process firm up the specs for, that I may then post.  Otherwise it might be a matter of posting the recipe I made from memory/invention last night, complete with a picture still in the camera.

Speaking of which, I made Finnish Pancakes the other day, modified slightly from the linked recipe.  I used a full 6 eggs, only about 3/4 or so of the milk, a glug of vanilla extract, a tad more butter, and heavy on the flour by as much as 1/4 cup so I’d have a more pronounced crust.

It came out extremely tasty, but thin because it was not sufficient for the pan.  Which I believe is a 12x16, but I haven’t measured.  Deb gamely ate a serving, and liked the taste, but it didn’t go over well because she can’t stand anything with a custard texture.  Oh well, more for me.  I love the stuff cold, so I enjoyed having the leftovers for a couple days.

I tripped up on the cooking directions, which are non-standard as published.  I didn’t want to leave it in the over until morning as my stepmother described.  However, it’s easy to tell when they’re done.  I started at 450 and that seemed to cook the edges too fast, then I reduced to 300 or so the rest of the time.
