A Recipe: Whipped Sweet potatoes with apples

4 large sweet potatoes (3lbs)
3 TSP unsalted butter room temp
2 TBSP heavy cream
½ cup applesauce (homemade)
2 teasp. grated fresh ginger
coarse salt and pepper
2 apples peeled/cored
3 TBSP sugar
375 oven. Place potatoes on a parchment line baking sheet; pierce each potato. Bake until very tender when pierce with knife. Remove and let cool slightly.
Scoop out flesh into electric mixer bowl. Add 2 tbls. butter and cream beat with paddle until smooth. Add applesauce and ginger beat to combine. Season with salt and pepper. Transfer potato mixture to ovenproof dish. Place in oven about 10 min until heated thru.
Cut apples into 1 inch pieces. Melt remaining 1 TBLS butter in nonstick skillet over medium high heat. Add apples and sugar; saute until golden and nicely caramelized. About 8 min. Top apples onto the potato mixture and serve.
