Banana Bread?
Anyone want to share a good recipe for banana bread? We got some free food yesterday, including more bananas than we’ll use before they spoil, and which already look unsavory because of apparently having been in some form of cold storage. So we have decreed banana bread as the thing to do.
Last night’s supper cost about 50¢ after the food we got free, courtesy of an unclaimed Share box. The potatoes, carrots, and marinated steak tips were all free. Woohoo! I added some frozen peas to the mix, and it was great. Not quite how I’d flavor the steak tips, but not bad.
Not sure where I got this recipe but it is yummy!
Banana Bread
1 tsp baking soda
2 c flour
1/2 tsp salt
1/2 c oleo
1 c sugar
2 egss
1 c mashed bananas
1/3 c milk
1/2 c lemon juicePreheat oven to 350.
Stir all dry ingredients. Cream oleo. Add remaining “wet” ingredients, mix well. Combine with dry mix, pour in to loaf pan. Bake at 350 for 60-70 minutes.

my wonderful recipe is very similar to Sharon’s. That ought to be yummy!
How about banana pudding or banana cream pie?

My dad gave me this Blender Banana Bread recipe.
2 eggs
1/2 cup soft shortening
2 ripe bananas, cut into pieces
3/4 cup white sugar
1 1/4 cup flour
3/4 teaspoon baking soda
1 1/4 teaspoon cream of tartar
1/2 teaspoon salt
2 ounces chopped walnuts (optional)Mix eggs, shortening, and sugar in blender. Blend until smooth. Add Bananas. Blend until combined. In a mixing bowl, combine flour, baking soda, cream of tartar, salt, and walnuts. Pour blender contents over dry ingredients and mix to combine. Pour into a greased 8x4x?? pan. Bake at 350 for 40-45 minutes. Cool on rack.

Quick Banana Bread
Preheat oven to 350 degreesSift together:
1 3/4 cups flour
2 1/4 tsp baking powder
1/2 tsp saltBlend until creamy:
1/3 cup shortening (I’ve also used butter)
2/3 cup sugar
3/4 tsp grated lemon rindBeat into sugar mixture:
2 beaten eggs
1 1/4 cups ripe banana pulp (2-3 bananas - in my opinion you can’t have too much banana)Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition until smooth.
Fold in (these are optional)
1/2 cup broken or chopped nuts (your choice)
1/4 cup finely chopped dried apricots (I’ve never added these)Spoon the batter into a greased bread pan. Bake for about an hour until done.
Be aware that if you use the toothpick test, and you go through a piece of banana, it will look wet. Just make sure that if it’s wet it’s clear and not batter-ish.
I usually double or triple this recipe because one loaf gets inhaled practically before it leaves the oven.
Other good ways to use your bananas:
Make regular pancakes, and then add in 2-3 mashed bananas.Make regular muffins, add in 2-3 mashed bananas.
Banana smoothies.
For a real treat, make your banana bread recipe but spoon it into a muffin pan. You get superbly rich bread-muffin thingies. I.e., they look like muffins but taste like banana bread, with lots of nice crispy crusty bits.
Last but not least, if you can’t use up all your bananas now, mash them up and freeze them, 2-3 bananas worth in a sandwich-sized bag. (Of course I should not be encouraging you to use actual sandwich bags for freezing . . . just use freezer bags that are about the size of sandwich bags, if you get my drift.)
Anyway, you can pull the frozen banana mush out anytime for smoothies or pancakes or banana bread - it won’t matter that the mush looks brown as long as it’s mixed in something else. If you flatten the bags when you freeze them they’ll thaw quickly.
