Cranberry Pie
This is a recipe someone gave my stepmother, origins unknown. It was astonishingly good! We had it there at Thanksgiving. Here it is, verbatim (some ingredients are listed “in-line” rather than at the top):
325 Oven
10” Pie plate
2 Cups cranberries
1/2 Cup sugar
Place cranberries in pie plate. Sprinkle 1/2 cup sugar over berries.
Mix together.
2 Eggs beaten, 1 cup sugar and 1 cup flour.
Melt 3/4 cup butter and slowly mix into above egg mixture until well incorporated. Spread over the berries.
Bake 1 hour.
I can’t recommend it enough. We’ll probably make it in the next week or so.

Posted by on 12/17 at 06:06 PMNo crust. “Cranberry pie” is the name on the recipe my stepmother gave me, and it’s in a round dish, but it’s not like a traditional pie at all. It’s a little more like… a cobbler maybe? But not that either.
It’s basically a layer of cranberries on the bottom, sweetened enough to be good but still have some tang, with a layer of almost cobbler-like (actually reminds me of the dough in my mother’s cherry squares, but stiffer and less sweet) dough on top, merged into the cranberries a bit.
I couldn’t get enough of it and specifically asked my stepmother to write down the recipe. We had that, pumpkin pie, and mocha squares for Thanksgiving, and that was the big favorite.
