Mmmm… Pork
Nope, this is not a post about Congress, or Bush’s form of “conservativism.” It’s not even a post about Pooh and Tigger inviting Piglet over for pork chops, though that’s closer.
I have almost 2.5 pounds of thin, center cut pork chops, with bones. Very nice looking meat.
Any serving suggestions? Figured my couple of readers might have thoughts on a new and exciting way to prepare them.
I had pork chops for the very first time a few months back, and I used this recipe. I thought it was yummy
Pork: 4 (1 1/2-inch) thick center-cut loin pork chops, with bone Salt and pepper Olive oil 4 cloves garlic, finely chopped 1 cup finely chopped red onions 1 cup dry white wine 1 cup chicken stock 1 teaspoon Dijon mustard 1 teaspoon coarse-grained mustard 1 tablespoon finely chopped fresh thyme
Season pork with salt and pepper on both sides. Heat a few tablespoons of oil in a large saute pan until almost smoking. Cook the pork for 3 to 4 minutes on 1 side or until golden brown, turn over, reduce heat to medium and continue cooking to medium doneness. Remove to a plate and keep warm. Pour off all but 2 tablespoons of the fat. Add the garlic and onions and cook until soft. Add the wine and cook until reduced by half. Add the stock and cook to a sauce consistency. Whisk in the mustards and thyme and season with salt and pepper to taste.

Those kind of chops make awsome stir fry. Slice them into smallish pieces and soak them in soy sauce.. Squeeze out as much of the soy as you can and stir fry.. yum.

Buy a package of the (powdered) ranch dressing mix (Hidden Valley ). Pour it on a plate (dry) brush chops with olive oil and then coat them with the ranch powder, salt pepper and grill. I put them on my George Foreman grill.
