Anyone have a simple recipe for cooking a roast beef in a crockpot?
There were beautiful roasts (top round I think) for $1.99/lb when I shopped last night, so I got one. It’s about 2.75 lbs.
I could make shredded beef out of it, but I thought it would be nice to do something different. The barbecue shredded beef is a great way to use junk steak. This is better stuff, even if it’s just as cheap. I could also use the oven and make a traditional roast beef (which I have never done), but I thought it would be convenient to use the crockpot: Toss it in, leave, come home several hours later, eat.
Thoughts? I have carrots, but no potato or onion, if you’re thinking in pot roast with veggie kinds of thoughts. I’ve been avoiding potatoes, waiting for the arrival of ones that aren’t ratty looking leftovers and/or are insanely cheap. I assume I could simply put in a small amount of water, toss in the meat, salt and pepper it maybe, and put it on low for several hours, if the point is just to cook it done. Figured I’d see if there are more creative ideas. I’m also looking at the online recipes that are out there, which annoyingly seem to have mastered the Firefox popup blocker, and are poorly organized. That is, most of the search results take you to massive index pages listing every recipe containing one or more of the named ingredients.
Update:
We’ll see how it turns out. I spiced some butter in a frying pan, seared the beef thoroughly on all sides, put it in some water in the crockpot, added a little vinegar, couple of spices, brown sugar, and set it to cook on low for 8 hours (which will presumably be stopped before the 8 hours is up).

Posted by caltechgirl on 05/11 at 01:23 PMHere’s how I do it. around half a cup of water in the bottom on the crockpot. Might need a bit more if you have a big pot. Rub the roast with salt and papper and any other spices you think will make it taste good. Poor a package of lipton Beefy onion soup mix over the roast. Don’t pour water on after you poor the soup mix. Leave it dry on the roast. Cover with what ever assortment of veggies you want. Cook for as long as you can stand the smell..
