Recipe: Molasses Coriander Cookies
Almost forgot! I meant to post a recipe for the week. Here’s something different, courtesy of my step-aunt…
MOLASSES CORIANDER COOKIES
¾ cup butter
1 cup sugar
1 egg
1 teaspoon vanilla
¼ cup molasses
2 cups flour
2 teaspoons Baking soda
½ teaspoon ground coriander seed
1 teaspoon cinnamon
¼ teaspoon salt
Cinnamon sugar
Preheat oven to 350
Melt butter and cool. Add to cooled butter the sugar, egg, vanilla and molasses and mix well. Sift dry ingredients (except cinnamon sugar) and add to butter mixture forming dough. Chill overnight. Form into ½” balls, roll in cinnamon sugar. Place on greased baking sheet. Bake 8 to 10 minutes.
Note: Original recipe the oven was 375 for 8 to 10 minutes. 350 oven for full 10 minutes seems to work well.
Given that “cooking is art but baking is chemistry” I would be interested in the difference that slight temperature adjustment makes. Also given that I prefer chewy to crunchy.
