Recipe: Oatmeal Cake
OATMEAL CAKE (Another borrowed recipe...)
Mix together and put into small bowl and let stand for 20 minutes:
1 cup instant oatmeal
½ cup margarine or butter
1 ¼ cup boiling water
Beat 2 eggs with 1 cup white sugar and 1 cup brown sugar in large bowl. Add the oatmeal mixture to the egg mixture.
Sift 1 ¼ cups flour, 1 teaspoon baking soda, 1 tablespoon cinnamon and 1 tablespoon salt. Add to oatmeal/egg mixture. Add 1 Tablespoon vanilla.
Grease fluted pan. Bake 350 oven. Time: between 50 and 60 minutes.
