Fresh Blueberry White Chocolate Cheesecake
Since I haven’t created one of my own that I am ready to post this week, here’s another recipe from my stepmother’s collection. I love cheesecake, and while I haven’t tried it, this sounds divine…
Fresh Blueberry White Chocolate Cheesecake
Choc Macadamia Nut Crust:
8 oz unsalted butter
1 ½ cups macadamia nuts, diced
1 cup graham cracker crumbs
¼ cup cocoa powder
½ cup sugar
Melt butter in micro. In mixer, combine all dry ingredients until well mixed. Add butter, mix well. Form crust in spring form pan. Refrigerate until ready to use.
2 cups white chocolate chips
6 whole eggs
2 cups heavy cream
1 tsp. vanilla
3 pounds cream cheese
2 cups fresh blueberries
¾ cup white sugar
Melt choc. and 1 cup of heavy cream in micro for 1 ½ min.. Cream cheese in mixer with paddle. In separate mixing bowl whip eggs and vanilla.Add sugar and heavy cream to cream cheese; mix for 5 minutes. Add melted choco and mix until incorporated; then add eggs and vanilla mixture and whip until blended. Alternate cr. cheese mixture and blueberries in Chocolate Macadamia Nut Crust.Finish with blueberries on top. Bake @ 300 degrees for 2 hours. Cool 6 hours before serving.
