Meal In A Wrapper
I meant to mention how clever Deb was at coming up with a new use for flour tortillas. She made another batch from her mother’s recipe, to be posted her sometime soon, yesterday.
Last time we used them for steak burritos and queseillas.
For something different, Deb grilled some chicken breast, cooked some rice and freedom-style green beans. We put a little sour cream, rice, beans and chicken pieces on each tortilla, wrapped and ate them. It was even better than I expected!
There are nine left, which we can use for turkey quesedillas, or wrap sandwiches, or whatever.
For the quesedillas, I put a bunch of grated cheddar and the meat, if any, on half of one tortilla, fold it in half, and fry each side briefly in shallow hot oil, or oil and butter mixed. I originally used two whole ones, but the halfs are easier to flip without losing the contents, and make portioning and cutting, if desired, easier. I figure turkey has to work as well as chicken.
Anyway, I recommend that meal-in-a-tortilla idea. The chicken wasn’t strongly spiced, but yummy. Corn would have worked as well as beans. I could see it being a good way to get kids to eat veggies, as part of a fun, fork-free serving idea.
